Nutritional value, heavy metal contamination and health risk assessment of Phalangium opilio Linnaeus, 1758 as a potential edible arachnid

Gürmeriç, Hüseyin Ender; Kurt, Pınar; Ürkek, Bayram

Edible insects and arachnids have increasingly been recognised as alternative food sources. The aim of the study was to evaluate the harvestman species Phalangium opilio (P. opilio) Linnaeus, 1758 as a new edible species. In this research, some chemical properties, fatty acid and mineral composition of the P. opilio were investigated. Additionally, the heavy metal contamination and its health risk assessment were evaluated. The fat and protein contents of the samples were 1.18% and 14.07%, respectively. The P. opilio had unsaturated fatty acids such as myristoleic, palmitoleic, linoleic and oleic acids. The P. opilio was analyzed for K, Mg, Na, Ca, Fe, Zn, Al, Mn, Se contents, estimated daily intake and contributions to the recommended daily mineral intake were calculated. The heavy metals detected in the P. opilio were Cu, Ni, Cd, Pb, As, Cr, Co and Ag. The Cd had the highest target hazard quotient value (2.16). The hazard index value of the P. opilio was 3.32 and it had a potential health risk level. Consequently, although P. opilio exhibited favourable nutritional properties, the THQ value for Cd and the cumulative HI value exceeded the recommended safety threshold, indicating a potential non-carcinogenic health risk associated with its consumption. Accordingly, considering the detected heavy metal levels and associated health risk indices, the consumption of wild-collected P. opilio should be approached with caution. © Hüseyin Ender Gürmeriç et al., 2026. Safety and Nutritional Profile of Traditional Turkish Cheeses: A Comprehensive Study on Their Mineral Content, Heavy Metal Contamination, and Health Risks of Aho, Golot, and Telli

    Erol, Seyit; Ürkek, Bayram

Traditional cheeses from Turkey's Black Sea region, such as Aho, Golot, and Telli, are widely known for their unique flavors and artisanal production methods. However, their microbiological safety, mineral content, and heavy metal contamination remain understudied. In this study, we evaluated 30 cheese samples for essential minerals and toxic heavy metals, alongside conducting a corresponding health risk assessment. The results of our mineral analysis revealed sodium (Na) levels ranging from 9787.79 to 37,902.22 mg/kg, while calcium (Ca) and magnesium (Mg) were present at nutritionally relevant concentrations. Heavy metals such as lead (Pb) and mercury (Hg) were detected, with Golot and Telli cheeses showing elevated levels (Pb: up to 1788.75 μg/kg; Hg: up to 468.71 μg/kg). Furthermore, health risk assessments, including estimated daily intake (EDI), target hazard quotient (THQ), and hazard index (HI), indicated that 93.3% of samples posed negligible risks (HI < 1), though two outliers (6.7%) exceeded safety thresholds. Taken together, these findings underscore the need for improved production processes in traditional cheese production while affirming their nutritional value and overall safety for consumers.

Human health risk assessment of heavy metals accumulation in different genders and tissues of whiting fish (Merlangius merlangus euxinus Nordmann, 1840) from Rize, Turkey

Şirin, Murat; Bayrak, Esra Yılmaz; Baltaş, Hasan

The contamination of fish resulting from marine pollution is a major concern, as it poses potential adverse effects on human health. Therefore, heavy metal concentrations (Cr, Fe, Ni, Cu, Zn, and Pb) in different genders and tissues (muscle, liver, gonads and gills) of whiting fish collected from fish markets in Rize province were determined by Inductively–coupled plasma optic emission spectrometry (ICP–OES). The concentration ranges of heavy metals in all tissue samples, based on the overall average, were as follows (mg/kg wet weight): Cr: 0.081–0.25, Fe: 2.3–40, Ni: 0.070–0.095, Cu: 0.33–1.01, Zn: 3.0–20, and Pb: 0.015–0.043. The results indicated that the liver and gills exhibited a higher metal accumulation capacity compared to other tissues, whereas the muscle consistently displayed the lowest metal concentrations. The metal concentrations in the muscle were found to be below the maximum permissible levels set by international organizations for seafood. Additionally, calculated estimated daily intake (EDI), metal pollution index (MPI), target hazard quotient (THQ), total exposure hazard index (HI), and target carcinogenic risk (TR) indicate no potential risk to humans from whiting fish consumption.

Adsorption Behaviour of EDTA Modified Magnetic Fe3O4 Coated Brewed Tea Waste on Cr(VI) Removal

Yilmaz Camoglu, Aslihan; Ozdes, Duygu; Duran, Celal

The study focused on fabricating a novel magnetic Fe3O4 loaded and EDTA modified brewed tea waste (TW-Fe3O4-EDTA) as a cheap, environmentally friendly, and efficient adsorbent for the removal of Cr(VI) ions from aqueous medium in a batch system. Characterization of the prepared adsorbent was performed with different techniques. Adsorption experiments were implemented at different conditions including initial solution pH (1.0–7.0), equilibrium time (1–480 min), adsorbent dosage (1.0–20.0 g L–1), and initial Cr(VI) concentration (50–1000 mg L–1). The optimum adsorption performance was observed at pH 2.0 with 120 min of contact time. Maximum adsorption capacity of 114.9 mg g–1 was acquired for TW-Fe3O4-EDTA which is much higher than the recently developed adsorbents for Cr(VI) removal. Adsorption process was well explicated by Freundlich isotherm model and the adsorption rate is described in accordance with pseudo-second order kinetic model. It was observed that common salts did not have a notable influence on Cr(VI) adsorption. The results of the study indicated that TW-Fe3O4-EDTA can be applied as an effective adsorbent in heavy metal removal as an alternative to many expensive adsorbents available in the literature.

Determination of Elemental Contents and Microbiological and Chemical Properties of Çökelek Cheeses Consumed in Turkey

Kalaycı, Nagihan; Ürkek, Bayram; Öztürk, Feyza; Şengül, Mustafa; Çiftçi, Esengül

The Çökelek samples what 30 different were collected from randomly local bazaars to investigate heavy metal contaminant and mineral levels and some physicochemical and microbiological properties of samples. While the Pb was identified in 6 of the 30 samples, the As was only found in 4 of the samples. The mean major and trace element contents of Çökelek samples were ordered as Na > P > Ca > K > Mg and Al > Zn > Ni > Cu, respectively. The physicochemical properties indicated a high deviation among samples. The mean total solids, ash, salt, fat, protein waters soluble nitrogen contents, and sample ripening index were 29.83%, 1.88%, 0.68%, 4.31%, 19.84%, 0.33%, and 1.79%, respectively. The mean total aerobic mesophilic bacteria (TAMB) count of Çökelek samples was found as 8.26 log CFU g−1. The coliform bacteria and yeast-mold counts were detected in 11 and 27 of 30 samples, respectively. The mean coliform and yeast-mold counts were 1.82 log CFU g−1 and 7.11 log CFU g−1, respectively. Traditional cheeses are not mentioned in legal laws such as the Turkish Food Codex. So, there is no legal limit and standard production processes. This situation is a problem in terms of traditional cheese quality. For this reason, traditional cheese should perform further studied, and determine the legal limits.

A facile and sensitive coprecipitation method coupled with flame atomic absorption spectrometry for quantification of Cu(II) ions in complex matrices

Ozdes, Duygu; Duran, Celal; Bektas, Hakan; Mentese, Emre

In the present investigation, the application of an organic coprecipitant, 2-[5,6-dichloro-2-(2-bromobenzyl)-1H-benzimidazole-1-yl]acetohydrazide (DIBBA), for separation and preconcentration of Cu(II) ions in fruit and water samples through a new carrier element free coprecipitation (CEFC) method was researched for the first time. Flame atomic absorption spectrometer (FAAS) was used for the analyses of Cu(II) ions. The main effective experimental factors such as solution pH, DIBBA quantity, waiting time, centrifuge speed and duration and volume of sample on the recovery efficiency of Cu(II) ions were explored in detail. Under the optimized conditions the preconcentration factor (PF), relative standard deviation (RSD), and limits of detection (LOD) was achieved as 50, 3.4 % and 0.44 µg L-1, respectively. No interference effects were detected by virtue of the presence of various foreign ions. Satisfactory recoveries (in the range of 94.4 to 103.0 %) in the environmental sample matrix were acquired. After being validated the recommended selective, low cost, simple and rapid CEFC method by spike/recovery tests, it was properly implemented for the low levels detection of Cu(II) ions in sour cherry, mulberry, apple, and peach as fruit samples and stream and sea water samples without any significant matrix effects.

Application of Magnetic Fe3O4 Alnus glutinosa Sawdust Biochar/SiO2/CTAB as a New Sorbent for Magnetic Solid Phase Extraction of Heavy Metals from Fruit and Waters Samples

    Duran, Celal; Ozdes, Duygu

The coating of magnetic Fe3O4 Alnus glutinosa sawdust biochar with SiO2 and further functionalising by cetyltrimethyl ammonium bromide (CTAB), a cationic surfactant, was described for the first time in the current paper. The magnetic Fe3O4 Alnus glutinosa sawdust biochar/SiO2/CTAB(MAGBC/SiO2/CTAB) was implemented to separate and preconcentrate the Cu2+, Cd2+, and Pb2+ions efficiently in waters and a number of fruit samples by solid-phase extraction (SPE) method. Adsorbent characterisation was realised by fourier transform infrared spectroscopy (FTIR) and scanning electron microscopy (SEM). Fundamental factors affecting the extraction yield of the analyte ions including solution pH, adsorbent amount, sample volume and desorption contact time were fully researched and optimised as 8.0, 0.25 g, 500 mL and 60 min, respectively, and the eluent was specified as 5.0 mL of 0.1 M of HCl solution. The adsorption equilibrium eventuated after 15 min of contact time and it was noticed that the chemisorption mechanism was dominant upon the analyte ions adsorption. The limits of detection (LOD) were calculated as 0.24, 0.62 and 1.55 µg L−1 and the limits of quantitation (LOQ) were determined as 0.81, 2.08, and 5.17 µg L−1 for Cu2+, Cd2+, and Pb2+ ions, respectively. The relative recoveries (RR%) were in the ranges of 93.3–103.4%, 92.5–102.8%, and 91.8–101.9% for Cu2+, Cd2+, and Pb2+ ions, respectively, while the relative standard deviations (RSD%) were obtained lower than 4.0% (n = 10) by applying the method at optimised conditions. The maximum adsorption capacities of MAGBC/SiO2/CTAB were obtained as 123.7, 80.0 and 118.5 mg g−1for Cu2+, Cd2+, and Pb2+ions, respectively. Consequently, the developed new, simple, rapid, sensitive, and economical SPE method based on MAGBC/SiO2/CTAB was successfully implemented to waters and some of the fruit samples to determine the Cu2+, Cd2+, and Pb2+ions simultaneously.

Insights into brewed tea waste as a green and low-priced adsorbent for solid-phase extraction of Cd(II) ions: isotherm, kinetic, and artificial neural network approach

Ozdes, Duygu; Tilki, Nida; Seker, Serdal; Duran, Celal

In the present research, brewed tea waste (BTW) was utilized as a green, low-priced, and abundant adsorbent for separation/preconcentration of Cd(II) ions through solid-phase extraction method from water and foods for the first time. BTW was applied as a natural adsorbent, without using any chelating agent to bind Cd(II) ions or any chemical reagent for its modification. A three-layer artificial neural network model using backpropagation algorithm was utilized to explicate a prediction model for the extraction performance of Cd(II) ions by selecting the input parameters as solution pH, quantity of BTW, sample volume, eluent concentration and volume, and equilibrium time for desorption. The preconcentration factor, relative standard deviation, and detection limit were attained as 100, 3.03%, and 0.56 µg L−1, respectively. It was decided that the Langmuir isotherm model is acceptable to characterize the retention of Cd(II) ions on BTW. This result pointed out that the active binding sites on the BTW surface are homogeneously distributed. Adsorption capacity of BTW was achieved as 41.5 mg g−1 which is higher than several expensive and difficult-to-prepare adsorbents. Adsorption kinetics was elucidated by pseudo-second order kinetic model. After confirmed the accuracy of the method with spike/recovery studies, it was employed for Cd(II) determination in water (stream and sea water) and food (eggplant, lettuce, parsley, apple, and apricot) samples with high accuracy. The inferences of the study proved that the BTW offers a magnificent application prospect in the extraction of Cd(II) ions.

Assessment of Heavy Metal Contents of Mulberry Samples (Fruit, Leaf, Soil) Grown in Gumushane Province; [Beurteilung des Schwermetallgehaltes bei Maulbeeren (Frucht, Blatt, Boden) aus der Region Gumushane]

Kalkisim, Ozgun; Ozdes, Duygu; Baltaci, Cemalettin; Duran, Celal

The present study aims to identify the heavy metal contents of white mulberry (Morus alba L.) and black mulberry (Morus nigra L.) that are grown in the city center of Gumushane province and its neighboring counties. Heavy metal analyzes were performed in the fruits, leaves and soils of the plants. The control samples, on the other hand, were collected from the mulberry trees located 3 km away from the highway where the vehicle traffic and industrial activities are at their lowest. Sample collection was performed twice a year, namely during the ripening period and fully ripening period of the fruits. The analyses of the heavy metals were performed by using inductively coupled plasma-mass spectrophotometry (ICP-MS). The obtained results were compared with the acceptable limits of heavy metal for humans as established by the World Health Organization (WHO), Turkish Food Codex (TFC) and the literature and an opinion was submitted as to whether they present any risk in terms of human health. When the available data is evaluated, the mulberries grown in Gumushane province, were found to have presented a health risk in terms of Pb, Cd, Ni, Cu, Zn, Mn and Co metals.

Geochemistry of Çoruh River Bed Sediments in NE Turkey: Implications in Weathering-Sedimentary Cycle, Provenance, and Metal Pollution

    Eker, Ç.Saydam.; Kiliç, E. Demirkol

This study defines the source area, sub-aerial weathering, and sedimentary cycle level, as well as heavy metal content and origin, of the Çoruh River bed sediments. The studied sediments are geochemically classified as litharenite based on the ratio of the major element contents. Relative to the Upper Continental Crust (UCC), trace elements Rb, Sr, Ba, Th, U, Zr, Hf, Y, Nb, and Pb are generally depleted; Co, Ni, Cu, Sc, and V are generally enriched; and Au is depleted in some places and enriched in other places. The rare earth element (REE) distributions of the samples exhibit a trend similar to that of the upper continental crust (UCC); however, low to moderate depletion occurs in the bed sediments in UCC. The analyzed samples exhibit low Chemical Index of Alteration (CIA) values, Plagioclase Index of Alteration (PIA) values (<50), CIA/WIP (Weathering Index ratios <1), and substantially high Index of Compositional Variability values (ICV) (>1). Thus, the samples are not chemically mature and are mainly derived from non-altered sources and were exposed the simple cycling history. REEs are depleted in the river bed sediments, unlike the world river average silt, world river average clay, and suspended sediment in world rivers. Minor enrichment of Zn, Sn, and Sc contents, low-to-moderate enrichment of Cu content, very severe enrichment of as content, and extremely severe enrichment of Ni content of the analyzed samples are observed. Consequently, stream bed sediments are derived from intermediate sources close to mid-continental crust rather than felsic sources Low-to-moderate degrees of chemical weathering of these sediments indicate increased tectonic activity, increased erosion, and rapid sedimentation in semiarid to arid conditions in the source regions over time. Thus, the sediments are chemically immature. These sediments are exposed to lithogenic and anthropogenic contamination.

Environmental impact of Gümüşhane City, Turkey, waste area in terms of heavy metal pollution

Vural, Alaaddin; Gundogdu, Ali; Akpinar, Ibrahim; Baltaci, Cemalettin

The aim of this study is to investigate the occurrence of a heavy metal contamination in a solid waste site of Gümüşhane City, Turkey, to examine the dimensions of the risk of contamination, and to present suggestions for possible solutions. For this purpose, heavy metal contents of soil and leachate samples taken from a Gümüşhane waste site were determined by a new method, microwave plasma-atomic emission spectrometry (MP-AES). When the obtained results are compared with background and control values, it can be seen that the region carries contamination risks, especially in terms of heavy metals such as Zn, Cd, Pb, Cu, Ni, and Co. To examine the environmental effects of the landfill area in more detail, geodeposition index (Igeo), enrichment factor (EF), contamination index (PI), and combined contamination index (IPI) parameters are used. In addition, the samples taken from an area supposed to be free of pollution risk were also analyzed as control samples, and the obtained data were statistically compared with the results of the waste area. It is determined that the results of landfill waste site are dissimilar to those of comparison samples in terms of investigated metals, and that they contained higher values in general.

Trace/heavy metal accumulation in soil and in the shoots of acacia tree, Gümüşhane-Turkey

    Vural, Alaaddin

In this study, heavy metal/trace element accumulation was investigated in soils along the road passing through Gümüshane city center and shoots of 1-2 years of acacia trees (Robinia pseudoacacia L.) grown in these soils. Heavy metal contents in soils and plants were analyzed by Enrichment Factor (EF), Geo-accumulation index (Igeo) parameters, and by Bio Accumulation Factor (BAF), respectively. According to geo-accumulation index (Igeo) data, it is seen that the soil was unpolluted in terms of Cr, Co, Cu, Rb, Sr; unpolluted to moderately polluted in terms of V, Ni and Zn; moderate to excessively polluted in terms of As, and moderate to excessively polluted in terms of Pb. According to EF parameters, on the other hand, it is observed that the soil was non to slightly enriched in terms of Cr, Co, Sr and Ba; non to moderately enriched in terms of Ni and Cu; slightly to significantly enriched in terms of Zn; significant to very highly enriched in terms of As and slightly to over excessively enriched in terms of Pb. Although trace/heavy metal contents of acacia shoots were usually within normal values for acacia, it was determined that Cu, Fe, Mo, Ni, Sr and Zn concentrations were within and/or above upper limits of normal values in certain sampling points.

Determination of Pb(II), Zn(II), Cd(II), and Co(II) ions by flame atomic absorption spectrometry in food and water samples after preconcentration by coprecipitation with Mo(VI)-diethyldithiocarbamate

Tufekci, Mehmet; Bulut, Volkan Numan; Elvan, Hamide; Ozdes, Duygu; Soylak, Mustafa; Duran, Celal

A new, simple, and rapid separation and preconcentration procedure, for determination of Pb(II), Cd(II), Zn(II), and Co(II) ions in environmental real samples, has been developed. The method is based on the combination of coprecipitation of analyte ions by the aid of the Mo(VI)-diethyldithiocarbamate- (Mo(VI)-DDTC) precipitate and flame atomic absorption spectrometric determinations. The effects of experimental conditions like pH of the aqueous solution, amounts of DDTC and Mo(VI), standing time, centrifugation rate and time, sample volume, etc. and also the influences of some foreign ions were investigated in detail on the quantitative recoveries of the analyte ions. The preconcentration factors were found to be 150 for Pb(II), Zn(II) and Co(II), and 200 for Cd(II) ions. The detection limits were in the range of 0.1-2.2 μg L-1 while the relative standard deviations were found to be lower than 5 % for the studied analyte ions. The accuracy of the method was checked by spiked/recovery tests and the analysis of certified reference material (CRM TMDW-500 Drinking Water). The procedure was successfully applied to seawater and stream water as liquid samples and baby food and dried eggplant as solid samples in order to determine the levels of Pb(II), Cd(II), Zn(II), and Co(II) ions.
