- MakaleYalnız künye2026Scopus SJRQ3Effects of Dietary Fibers Obtained from Cold-Press By-products on the in vitro Digestion of Spirulina
Berktas, Serap
This study aimed to investigate the effects of dietary fibers obtained from cold-pressing by-products on the bioactivity of Spirulina (SP) during in vitro digestion. For this purpose, insoluble dietary fibers (CCDL and KCDL) were extracted from cold-pressing by-products of flaxseed and black cumin. SP was combined with CCDL and KCDL, and subjected to an in vitro digestion protocol (INFOGEST). The results showed that the total phenolic content of SP decreased after oral and gastric digestion with the addition of dietary fiber. After small intestinal digestion, the total phenolic content increased. Antioxidant activity values (DPPH and ABTS) decreased in the presence of dietary fiber, while chlorophyll values increased after small intestinal digestion. In particular, in the presence of CCDL, the chlorophyll content increased from 1.61 mg g(-1) to 4.48 mg 2 g(-1) after small intestinal digestion. Furthermore, the bioactivity values of SP after in vitro digestion varied depending on the type of dietary fiber. While KCDL was effective in increasing phenolic compound content, CCDL was more effective in increasing chlorophyll content. Considering the bioactivity values of SP after oral, gastric, and small intestinal digestion, it was determined that the values increased especially in the small intestine. This highlights the possibility that the bioaccessibility and therefore the bioavailability, of SP can be increased through the incorporation of dietary fiber. The addition of bioactive compounds to the development of functional foods rich in dietary fiber has advantages for the food industry in terms of designing and improving healthy foods. This study emphasizes that the in vitro digestion of Spirulina is regulated in the presence of CCDL and KCDL, and that the addition of dietary fibers may contribute to the potential health benefits of Spirulina.
- MakaleAçık Erişim2026Scopus SJRQ3Impacts of Phenolic Compounds Alone and in Combination with Natural Substances or Drugs on Cancer Cells
Budak, Burhan; Sarikaya, Sevim Beyza Ozturk
Phenolic compounds (PCs) are secondary metabolites found in the root and flower parts of plants that help protect the plant from pathogens. The amount and content of the plant species and the environment in which they live vary. Because PCs have antioxidant properties, they have a preventive effect against oxidising substances. Therefore, PCs in the human diet contribute to the prevention of cancer, osteoporosis, diabetes, and many other diseases. Cancer is the most dangerous and deadly disease among these diseases today. Although many chemotherapeutic drugs are used against cancer, the tendency to use other drugs or other applications has increased because the effectiveness of chemotherapeutic drugs is low and healthy cells are damaged in the process. PCs boost the effectiveness of chemotherapeutic drugs against cancer cells while, preserving the health of other cells. In this review, in vivo and in vitro studies conducted in cancer lines, applications of PCs alone, combined applications of PCs with natural substances, and the effects of PCs with drugs were investigated and discussed. In conclusion, gallic acid, ellagic acid, caffeic acid, and ferulic acid are frequently used in cancer treatment. These findings highlight the potential of PCs as versatile adjuvants in cancer treatment, which can increase drug efficacy, protect healthy cells, and minimise toxicity. Consequently, they highlight the therapeutic potential of PCs as complementary agents in cancer treatment strategies.

Yeniçeri, Esra; Ürkek, Bayram; Şengül, Mustafa
In this study, stirred yogurt was produced using sloe berry powder at different ratios (0, 2, 4, 6, and 8%) and stored for 21 days. The effect of sloe berry powder addition on physicochemical properties was limited, whereas the effect of storage period was more pronounced. Lactic cocci and lactic bacilli counts ranged between 7.78–8.93 log CFU/g and 6.19–9.13 log CFU/g, respectively. Yeast and mold were detected in all samples after 14 days of storage. All color parameters were significantly affected by sloe berry powder addition (p <.001), whereas storage period had no significant effect (p >.05). Total phenolic content and antioxidant capacity increased with increasing levels of sloe berry powder. Only the potassium (K) content was affected by the addition of sloe berry powder. Viscosity and consistency values increased in yogurts containing 6% and 8% sloe berry powder on days 14 and 21 of storage. Sensory scores decreased in all samples at the end of storage. Principal component and correlation analyses indicated that the addition of sloe berry powder and storage period exerted distinct effects on the evaluated parameters. Overall, sloe berry powder can be considered a promising ingredient for the development of nutritional and functional stirred yogurt.

This study evaluated the branch, leaf, and fruit extracts of Laurus nobilis collected from Artvin in terms of phenolic composition, antioxidant, antimicrobial, and antidiabetic activities and additionally investigated the binding of selected phenolics to α-amylase/α-glucosidase targets through molecular docking. Using LC–ESI–MS/MS analysis, 31 phenolic compounds were quantitatively identified, with epicatechin, luteolin-7-O-glucoside, and rutin predominating particularly in the branches and leaves. Antioxidant capacity was higher in branches and leaves (total phenolic content [TPC]/FRAP/DPPH IC50: branches and leaves, respectively, 95.27–60.84 mg gallic acid equivalent [GAE]/g, 206.16–162.05 mg Trolox equivalent [TE]/g, and 46.95–113.49 µg/mL). Antimicrobial activity was observed within a minimum inhibitory concentration (MIC) range of 1.25–10 mg/mL; leaves exhibited the strongest effect against Bacillus cereus (1.25 mg/mL), whereas fruits were most effective against Candida albicans (1.25 mg/mL). In antidiabetic evaluation, fruits yielded the lowest IC50 values against α-amylase and α-glucosidase (4.31 and 8.97 mg/mL, respectively), suggesting a “composition-over-quantity” effect despite low total phenolic content. Docking results supported high binding affinities of rutin (α-glucosidase −9.3 kcal/mol; α-amylase −8.1 kcal/mol) and luteolin (−8.6 kcal/mol for both enzymes). Overall, although branches and leaves exhibited strong antioxidant profiles, fruits showed more pronounced inhibitory effects on digestive enzymes; therefore, fractionation studies and in vivo/kinetic validations are recommended.

Öz, Mehmet; Fidan, Muhammed Said; Baltacı, Cemalettin; Akmeşe, Osman; Sefalı, Abdurrahman; Aygül, İmdat
Enzyme inhibition activities, phenolic compounds, antioxidant activities, bioactive compounds, antimicrobial activities, and chemical components of essential oil and methanol extracts obtained from the aerial parts of S. cretica subsp. anatolica were investigated. The main phenolic compounds of aerial parts were catechin, oleuropein, and epicatechin. The determined enzyme inhibitor activities highlight the potential of S. cretica subsp. anatolica as a source of bioactive compounds, particularly for carbonic anhydrase and cholinesterase inhibition. The essential oil and methanol extract exhibited remarkable activities against CA-II, AChE, and BChE, although they were less potent than standard inhibitors. The essential oils generally showed stronger antimicrobial activity compared to the 30% methanol extracts across most bacterial and fungal strains, as evidenced by minimum lethal concentration (MLC) and lower minimum inhibitory concentration (MIC) values and larger inhibition zones. Chloramphenicol used alone exhibited the highest antimicrobial efficacy, with the lowest MIC and MLC values and the largest inhibition zones. The essential oils of S. cretica subsp. anatolica were determined as esters, oxygenated sesquiterpenes, and aldehydes in aerial parts. The main components were found to be hexahydrofarnesyl acetone in the aerial parts.

This study investigated the effects of conventional and modern drying methods on the total phenolic content, antioxidant activity, and phenolic compound composition of Trabzon persimmons (Diospyros kaki L.) fruits harvested from the same tree and at comparable maturity stages were subjected to sun drying, shade drying, oven drying, air-fryer drying, and microwave drying techniques, with raw samples serving as the control group. The total phenolic content was assessed via the Folin–Ciocalteu method, and the antioxidant capacity was evaluated using the ferric reducing antioxidant power (FRAP) and DPPH radical scavenging activity assays. The identification and quantification of phenolic compounds were conducted using the HPLC technique. The results indicated that the drying process produced statistically significant variations in the phenolic content and antioxidant capacity of Trabzon persimmons. The microwave drying technique resulted in highest total phenolic content and antioxidant activity, whereas both sun and shade drying procedures showed higher values than raw samples. The total phenolic content and antioxidant capacity of samples dried in an air fryer were found to be comparable to those of raw samples. The profile of phenolic compounds varied according to the drying process employed; certain compounds exhibited an increase with specific methods, while others were identified solely under particular conditions. Thus, it has been shown that drying techniques can have a significant impact on preserving and improving the functional properties of persimmons. Furthermore, we believe that microwave drying could be an effective alternative, particularly in terms of preserving bioactive compounds.

Mesci Dindar, Esra; Arserim-Uçar, Dılhun Keriman; Ayna, Adnan
In this study, a chitosan-based colloidal delivery systems (CDs) was developed as a natural delivery system for phenolic compounds from propolis extracts obtained via accelerated solvent extraction (ASE) and evaluated for improving the functional properties of walnut sausages. ASE propolis extract was incorporated into a chitosan (C)-based colloidal delivery system formulated with varying concentrations of diacetyl tartaric acid ester of mono- and diglycerides (DATEM) and lecithin (L). The formulation containing 2.5% chitosan, 12% DATEM and propolis, with a particle size of 265.9 nm and a ζ-potential of +40.8 mV, was selected for further characterization and food applications. The phenolic encapsulation of CDs depended on the structural characteristics of individual phenolic compounds, with chrysin (70.51%), vanillin (65.12%), and benzoic acid (51.26%) exhibiting the highest encapsulation; CD-treated walnut sausages decreased the lipid oxidation and improved the storage stability of the walnut sausages during storage. These findings indicate that the chitosan-based colloidal delivery system is a promising carrier for improving the encapsulation of propolis phenolics in walnut sausages.

This study aimed to investigate, for the first time, the phytochemical composition, antioxidant, antimicrobial, and enzyme inhibitory properties of the methanolic extract of Gelasia sericea (Aucher ex DC.) Zaika, Sukhor. & N.Kilian. The extract demonstrated a moderate yield (6.55 g/100 g dry plant material) and was found to be rich in phenolic acids, particularly ferulic acid (17182.97 μg g-1), followed by caffeic acid, protocatechuic acid, and p-coumaric acid. Antioxidant analyses revealed high total phenolic (388.86 mg GA eq./100 g), total flavonoid (74.03 mg QE eq./100 g), and total antioxidant capacity (503.33 mg AA eq./100 g). The extract exhibited remarkable ABTS radical scavenging activity (95.99%, IC50 = 37.59 mg ml-1) and considerable ferric-ion reducing power (974.78 mg FeSO4 eq./100 g). Antimicrobial assays indicated moderate inhibitory effects, with stronger activity against Gram-positive bacteria (Staphylococcus aureus, Enterococcus faecalis) and the yeast Candida albicans, whereas Gram-negative bacteria were less susceptible. The extract’s MIC values ranged between 0.20-3.25 mg ml-1, and MLC values between 0.41-6.50 mg ml-1, which were higher than those of standard antibiotics. Enzyme inhibition assays revealed moderate activity against carbonic anhydrase II (IC50 = 0.0136 µg ml-1) and weak inhibition of cholinesterases and α-glucosidase, while α-amylase inhibition was relatively more pronounced (IC50 = 13350.00 µg ml-1). Overall, these findings highlight G. sericea as a valuable natural source of phenolic acids and antioxidants, with promising potential for applications in functional foods, nutraceuticals, and phytopharmaceuticals. However, the relatively limited antimicrobial and enzyme inhibitory activities suggest the need for further studies on bioavailability, in vivo efficacy, and compound isolation to optimize its practical applications.

ABTS radikallerini giderme kapasitesine ait IC50 değerleri; çiçek-su (3.73 μg mL-1) > yaprak-su (3.69 μg mL-1) > α-Tokoferol (3.32 μg mL-1) > çiçek-alkol (3.12 μg mL-1) > Troloks (2.90 μg mL-1) > BHA (2.83 μg mL-1) > yaprak-alkol (2.72 μg mL-1) > BHT (2.60 μg mL-1) sıralamasında aktivite göstermiştir.

Akar, Zeynep
The members of the Scabiosa genus are one of the traditional medicinal plants used in the treatment of many diseases, in particular the treatment of scabies. In this study, it was aimed to determine antioxidant activities and chemical composition of methanolic extracts of leaves and flowers of Scabiosa columbaria subsp. columbaria var. columbaria. The phenolic contents of both parts of the plant were analyzed by LC-MS/MS. A total of 6 phenolic compounds were determined and chlorogenic acid was the major compound in both flower and leaf parts of the plants, with 5936.052 mg/g and 8021.666 mg/g, respectively. 6 different methods were used to determine the antioxidant activity of the plant parts. Both leaf and flower parts of the plant showed high antioxidant activity in all tested methods and the antioxidant activity values of the leaf part were measured higher than those of the flower part for four tests. The methanol extracts of the plant parts was analyzed with GC-MS and number of the essential oil compounds in the leaf and flower parts were determined as 17 and 13, respectively. Linalool compound was also found to be common in both parts of the plant. The major compounds of the essential oils were identified as 4Octadecenal (30.01%) in the flower and carvone (35.44%) in the leaf. In addition, terpene derivatives was determined as 90.32% of the highest essential oil group in the leaf, while this value was determined as 1.42% in the flower. For the flower, aromatics were determined as the main component group with 21.31%. (c) 2021 The Author. Published by Elsevier B.V. on behalf of King Saud University. The object of the present study was to investigate the antioxidant, antimicrobial activity and phenolic compounds of fruit and seeds of Diospyros lotus L. The fruits consumed by humans as nutrients were harvested from the plants that grow naturally in the province of Trabzon-Akçaabat, Eastern Black Sea Region of Turkey. The antioxidant activities of fruit and seeds of Diospyros lotus were determined by using four methods (% DPPH radical scavenging activity, FRAP antioxidant power determination, CUPRAC reducing antioxidant activity and total phenolic content (TPC) in five different proportion of methanol-water extracts. All extracts of fruit and seeds of D. lotus analyzed through whole antioxidant analysis methods showed significant antioxidant activity. In addition, antimicrobial activity of fruit and seeds extracted with DMSO was determined against seven standard bacteria and three multi-drug resistance clinical strains. Although fruit extracts did not have the antimicrobial activity against bacteria, seeds showed antimicrobial effect to both standard strains (Gram-negative and Gram-positive) and antibiotic resistance clinical isolates (Klebsiella pneumoniae carrying blaKPC, Acinetobacter baumannii, harboring blaOXA-23 gene and resistance to colistin, and multi-drug resistant Pseudomonas aeruginosa). MICs’ value of plant seed extracts for standard strains was 0.75-25 mg/mL and antibiotic resistant clinical bacteria were 12.5 and 25 mg/mL. Additionally, phenolic compounds in methanol extracts of fruit and seeds were also determined in by HPLC using 19 standards. Gallic acid and chrysin phenolic compounds were the major phenolic compounds in fruit and seeds, respectively.

Five different rosehip (Rosa L.) species including, Rosa canina, Rosa iberica Stev, Rosa villosa, Rosa beggeriana Schrenk and same kind of but different location Rosa spinosissima grown in Bayburt from Turkey are studied. The wild species of Rosa L. were collected from Rocks and Steps, Field and garden borders. Morphological parameters were measured as fruit and seed weights and fruit and seed size. Ten fruits were chosen randomly for the measurement and take the average of them to determine the weights and size. In our study was determined antioxidant activity, antimicrobial activity and phenolic compounds. As antioxidant activity; total phenolic total flavonoid, condense tannin contents, CUPRAC, FRAP, ABTS. Nineteen standard of phenolic compositions of fruits and seeds were determined. Antioxidant, antimicrobial activities of the extracts were found high levels in rose hip species fruit than seed. Catechin, rutin protocatequic acid and CAPE were principal for all rose hip species fruit but, was not deteceted CAPE Kop Mountain, Yukari Kop Village Rosa spinosissima species. This suggests that the difference in location affects the phenolic content. Pearson Correlation analyze has done with the morphological parameters, GPS data, antioxidant activity and phenolic compounds by using the SPSS software programme version 25.0.
