Effect of some spice essential oils on the stability of frying oils

Tanriverdi, Ebru Sandal; Özcan, Mehmet Musa; Juhaimi, Fahad Al

In this study, peppers and potatoes were fried in olive and peanut oils. In order to evaluate the oxidative stability of frying oils, essential oils of sage, rosemary, thyme at the concentration of 0.3, 0.6, 0.9 and 1.2 %, separately and 0.01 % butylated hydroxytoluene were added into olive and peanut oils. Chemical properties of frying oils (free fatty acid %, peroxide value, DPPH, total phenolic and fatty acid composition) were determined after frying. Butylated hydroxytoluene showed the best effect on free fatty acid % and peroxide value of olive oils after frying of peppers and potatoes. Free fatty acid % values of frying oils of peppers and potatoes showed variation. The nearest values of oleic, linoleic and linolenic acid contents of frying olive oils of peppers and potatoes were determined with sample addition of butylated hydroxytoluene. Oleic, linoleic and linolenic acid contents of peanut oil with butylated hydroxytoluene and potato frying oil that addition of 0.3 % rosemary essential oil were determined to nearly the initial value of oil. These essential oils were also determined to show high radical scavenging effect. Rosemary essential oil was determined higher the radical scavenging effect and lower total phenolic compounds than thyme essential oils. There were not exact a relationship between radical scavenging effect and the amount of total phenolic compounds. The aim of current study is to establish to the effect of some spice essential oils on the stability of frying oils.

Microwave assisted essential oil analysis and antimicrobial activity of M. alpestris subsp. alpestris

Cansu, Tayyibe Beyza; Yücel, Murat; Sinek, Kadriye; Baltaci, Cemalettin; Karaoglu, Sengül Alpay; Yayli, Nurettin

The present work describes the chemical composition and antimicrobial activity of the essential oil of Myosotis alpestris F.W. Schmidt subsp. alpestris (Boraginaceae). The essential oil was obtained from all parts of the plant by microwave distillation and analyzed by GCFID and GC-MS. Forty-seven components representing 88.2 % of the total oil were characterized and the main components of this species were found to be n-nonanal (11.8 %), decanal (10.8 %), n-octanal (10.7 %), hexahydrofanesyl acetone (6.6 %), o-cymene (3.9 %), tetradecanal (3.7 %), eicosanol (2.2 %) and E-β-farnesene (2.0 %). The isolated essential oils of M. alpestris subsp. alpestris was tested for antimicrobial activity against the bacteria Escherichia coli, Yersinia pseudotuberculosis, Pseudomonas aeruginosa, Staphylococcus aureus, Enterococcus faecalis, Listeria monocytogenes, Bacillus cereus, Mycobacterium smegmatis and the fungus Candida albicans and Saccharomyces cerevisiae at maximum essential oil concentration in hexane of 1000 μg/mL and they showed only antibacterial activity against fungus bacteria.

Effects of nitrogen and phosphorus fertilization and seeding patterns on chemical composition of Lucerne and smooth brome grass intercropping system

    Yolcu, Halil; Serin, Yunus

Intercropping has been used widely in forage plant production all around the world. In intercropping systems, forage plants need different requirements are grown together. Requirement of fertilization and seeding pattern of intercropping differ from mono cropping. The research goals were to evaluate the effects of various seeding patterns and fertilization on the crude protein and chemical content of lucerne-smooth brome grass mixture under field conditions in 2002-2003. Lucerne and smooth bromegrass mixtures were established with different seeding patterns (mixed, alternative and cross-seeding), N fertilizer rates (0, 60 and 120 kg N ha-1) and P fertilizer rates (0, 40, 80 and 120 P2O5 ha-1). The results of this study indicated that different seeding patterns, N and P fertilization affected chemical contents of alfalfa and smooth brome grass mixture in the intercropping system. Depending on different seeding patterns, N, Ca, K and Mg content varied significantly, but no P content in the intercropping system. Nitrogen application increased N content and P application likewise increased P content. While P application increased N content, N application had no effect on the P content of the intercropping. Calcium and K did not vary significantly depending on N and P fertilization; yet, a relationship between P application and Mg content was determined.

Nutrient value of some lucerne cultivars based on chemical composition for livestock

Yolcu, Halil; Dasci, Mahmut; Tan, Mustafa; Çomakli, Binali

This study was carried out to determine of nutrient contents of twelve lucerne cultivars in the highlands of Turkey. There were significant differences (p < 0.01) among the cultivars for crude protein (CP), neutral-detergent fiber (NDF), acid-detergent fiber (ADF). digestible dry matter (DDM), dry matter intake (DMI), relative feed value (RFV), total digestible nutrients (TDN), net energy-lactation (NEl), net energy-maintenance (NEm) and net energy-gain (NEg). Although Planet cultivar had the highest protein content (32.00 %). Kayseri cultivar is one of the lowest protein content (24.17 %) among the all cultivars. Neutral detergent fiber in cultivars ranged from 33.41 % (Seker cultivars) to 50.39 % (Kayseri cultivars). Average acid detergent fiber content for all cultivars was 34.31 %. Relative feed value in cultivars ranged from 104.78 % (Bilensoy-80 cultivars) to 185.03 % (Seker cultivars). The average TDN content was 56.89 %. Evaluating for this respect contents were the most quality Seker, Bilensoy and Savas cultivars among lucerne cultivars. In conclusion, Seker, Bilensoy and Savas cultivars among lucerne cultivars had better nutrient content than other cultivars.

Mineral content of some Lucerne cultivars for livestock

Yolcu, Halil; Dasci, Mahmut; Turan, Metin

The purpose of this study was to assess the mineral contents of twelve lucerne cultivars on the highlands for livestock. Lucerne cultivars (Bilensoy, alfa-484, Resis, alfa-1312, Savas, Kayseri, alfa-1313, Planet, Seker, Daisy, Bilensoy-80, CW-3567) were collected from cultivated fields. In general, Ca, Fe and Mn contents of the lucerne cultivars were the highest in Bilensoy cultivar, N in Planet cultivar, K in Savas cultivar, P in Daisy cultivar, Mg in alfa-1313 cultivar and Zn and Cu in Bilensoy-80 cultivar. Bilensoy, Daisy and Seker cultivars especially had very high mineral contents. The determination of mineral contents of Lucerne cultivars has been a phase in the evaluation of impacts to animal feeding. Lucerne cultivars had a very high nutritional potential and their N, P, K, Ca, Mg, Na, Fe and Zn values were higher than those required for animal nutrition. Because of high digestion, taste, cheapness of Lucerne plant and provision of macro and micro mineral, it has very important raw material nutrition for animal nourishment.
