Development of gluten-free cookie using composite flour from corn and lentil flours: Study by response surface methodology

    Bursa, Batuhan; İlyasoğlu, Huri

The demand for gluten-free foods has increased due to health-based issues and lifestyle choices. This study aimed to develop a gluten-free cookie with enhanced nutritional value. For this reason, the composite flour from corn flour (CF) and lentil flour (LF) was prepared for cookie formulation. To eliminate the possible negative impact of LF on the sensorial properties of the cookie, lemon peel powder (LPP) was incorporated into the cookie formulation. The effects of the LF level of composite flour and the incorporation level of LPP on the physical, textural, and sensorial properties of the cookie were investigated via response methodology. The optimal levels were found as 16 g LF and 1 g LPP for 100 g composite flour. The physical, textural, and sensorial properties, proximate composition, vitamin C and total phenolic contents, and antioxidant capacity of the developed cookie and control cookies were determined. The developed cookie had a higher nutritional value than the control cookie made from CF in terms of protein, dietary fibre, ash, and vitamin C. Moreover, it presented higher total phenolic content and radical scavenging activity. According to these results, the developed cookie can be proposed for a gluten-free diet.

Analysis of factors affecting the import demand for wheat and corn in Türkiye using the Seemingly Unrelated Regression Method; [Türkiye’de buğday ve mısır ithalat talebini etkileyen faktörlerin Görünüşte İlişkisiz Regresyon Yöntemine göre analizi]

    Merdan, Kurtuluş; Çomakli, Şafak Ertan

Objective: In this study, it is aimed to analyze the determining factors on the import demand for wheat and corn, which have an important place in Türkiye's grain imports, with the "Apparently Unrelated Regressions" model. Material and Methods: The data set used in this study consists of annual data covering the years 2006-2021. Stata program was used to analyze the data used in the study. Since Stata or Eviews programs do not provide the Standardized Beta (β) coefficient, statistical analyzes were performed using the formula in Microsoft Excel (β=B*SSXi / SSY). Results: Only the one-year delayed value of wheat imports, which is one of the explanatory variables in the wheat import model, was found to be significant, according to the study's findings. In terms of factors influencing corn import demand, similar results were obtained. Only total corn consumption was found to be statistically noteworthy among the explanatory variables in the corn import model. Conclusion: Based on these findings, wheat imports are influenced by changes in wheat imports from a year ago, while corn imports are influenced by changes in total corn consumption. Based on Türkiye's current structure and the findings obtained, it is understood that the country may continue to maintain its position as an importer of wheat and corn in the future.

Can Zeolite Application Decrease the Need for Nitrogen in Silage Corn?

Gül, Zeynep; Tang, Mustafa; Yolcu, Halil

The effects of applications of zeolite, nitrogen and zeolite + nitrogen on yield, quality and some morphological traits of silage corn was researched at the Research Station of the Agriculture Faculty, University of Ataturk, Eastern Turkey, during 2012 and 2013. Treatments included a control, three zeolite (Z(1): 500, Z(2): 1000, Z(3): 1500 kg ha(-1)), three nitrogen (N-1: 50, N-2: 100, N-3: 150 kg ha(-1)) and nine combinations of zeolite + nitrogen. The experimental design was randomized complete blocks with three replications. The application of zeolite + nitrogen application enhanced silage yield by 5.8-18.9%, dry matter yield by 4.5-21.4%, corncob rate by 6.6%, plant height by 3.0-16.1% and leaf rate by 17.5%. Further, the application of zeolite + medium or low nitrogen application produced similar silage yield, dry matter yield, dry matter rate, crude protein content, ADF, NDF, corncob rate, stem rate, plant height and leaf rate in comparison to the highest level nitrogen application. The results indicate that the application of zeolite + nitrogen can be used to increase efficiency of nitrogen and to decrease nitrogen requirements in silage corn for yield and other parameters.

Nutritive Value of Sunflower Silages Ensiled with Corn or Alfalfa at Different Rate

Tan, Mustafa; Yolcu, Halil; Dumlu Gul, Zeynep

Sunflower (Helianthus annuus L.) having shorter growing season, better cold tolerant and more drought resistant is important alternative silage plant in highlands. But it has poor silage quality. To improve the quality of sunflower silage can be mixed an appropriate amount of corn (Zea mays L.) and alfalfa (Medicago sativa L.). This research was carried out to evaluate quality characteristics of nine silage types: Sunflower, corn and alfalfa silages; plus their some mixtures silages (75% sunflower + 25% corn, 50% sunflower + 50% corn, 25% sunflower + 75% corn, 75% sunflower + 25% alfalfa, 50% sunflower + 50% alfalfa and 25% sunflower + 75% alfalfa); at two harvest stages: Beginning of flowering for sunflower and alfalfa and milk-dough stage for corn (early stage), and end of flowering stage for sunflower and alfalfa, and dough stage for corn (late stage). The experimental design was in a factorial arrangement of randomized complete block with replicated four times. Dry matter content (DM), crude protein content (CP), neutral detergent fiber content (NDF), acid detergent fiber content (ADF), silage pH and physical characteristics (PC) of silages were determined in this study. Mixing of alfalfa in NDF, ADF and CP and corn in DM, pH and PC had positively effect in sunflower silages. Late stage had positively affected DM, PC and pH for silage. Consequently, sunflower silages mixed with corn, with the condition of not being less than 50% at late stage, are recommended for farmers.

Yield and quality characteristics of sunflower silages in highlands

Guney, Erdal; Tan, Mustafa; Yolcu, Halil

This research was carried out to compare the yield and quality characteristics of four sunflower (Helianthus annuus L.) genotypes (i.e., confectionery Tekirdag landrace, confectionery Erzurum landrace, oilseed Sirena and oilseed C70165 hybrids) and one corn (Zea mays L.) genotype (i.e., SZE TC-S13 hybrid) in the Agriculture Faculty of Ataturk University in the east of Turkey during the period between 2005 and 2006. The study was designed in a randomized complete block design with five treatments replicated three times. The genotypes were evaluated in terms of forage properties as well as chemical and physical properties of silages in both years. According to the results, the corn genotype had better yield and silage qualities than sunflower genotypes. But crude protein contents of silages of sunflower genotypes were superior in comparison to the corn genotype. Also amongst sunflower genotypes, confectionery Tekirdag and Erzurum landraces had slightly higher silage qualities than oilseed sunflower hybrids.
