- MakaleAçık Erişim2021Effect of using chia seed powder on physicochemical, rheological, thermal, and texture properties of ice cream
Ürkek, Bayram
In this study, a mixture of salep and chia seed powder (CSP) at different ratios was used as a stabilizer in the production of ice cream. The effect of the mixtures was determined on the physical, chemical, color, rheological, thermal properties, instrumental hardness, and consumer acceptance properties of the ice cream samples. The viscosity, consistency coefficient, lightness (L*), whiteness index, (Formula presented.) (midpoint and offset), heat ice freezing, and melting values increased in the sample containing 0.6% salep and 0.2% CSP compared to the control sample and then decreased in accordance with the increment of CSP. The highest hardness value was determined in the sample containing CSP (0.8%). The control sample and sample containing 0.6% salep/0.2% CSP had the highest consumer acceptance scores. It was determined that 0.2% CSP could be used with salep to decrease the consumption of orchid species and to improve various quality properties of ice creams. Practical applications: Salep (Orchidaceae family) is generally used as a stabilizer in ice cream, and species of salep is been extinction day to day. This study indicated that the usage of the mixture of salep and chia seed powder can improve the quality properties of ice creams. Consequently, the mixture of salep (75%) and chia seed powder (25%) could be used as a stabilizer to reduce using salep and to protect species of salep to improve the quality properties of ice cream.

Advances in remote sensing technology enable monitoring and detection of these vulnerable water bodies that bear numerous functions and ecological services beyond their intended use. As such, valuable data and information may be provided for long and short-term analyses and stored in a database for future projections. This paper initially grouped 18 natural lakes of the Konya Closed Basin of Turkey according to their salinity level. Freshwater, saline and brackish lakes have then undergone temporal analysis for every 5-year intervals via Landsat satellite images. Freshwater lake surfaces have not changed noticeably during the inspection period; however, saline waters have decreased in surface area by 32%. Beysehir Lake constituting 94% of the freshwater category and Tuz Lake representing 97% of the saline group were selected for the short-term analysis that was monthly conducted for years 2017 and 2018 with optical and SAR images to better verify cause and effect relationship.

In this study, to supply to the trend toward natural and functional foods that do not include synthetic products, the wheat germ which exists as waste in nature was added to tarhana formulation in order to increase the nutritional content of tarhana. Wheat germ supplemented tarhana samples met the recommended dietary allowances of iron. A total of 63 compounds were detected and quantitated in all samples. Terpenes and terpenoids were observed as the dominant compound group. The addition of wheat germ to tarhana dough resulted in an increase in the number of volatile compounds. The most abundant odor-active compounds were acetic acid and 2-acetylpyyrole.The mineral (Mg, K, Zn, Mn), fatty acid (undecaenoic, linoleic, gondoic acid, and α-linolenic), oil, acid (propanoic and hexanoic), alcohol (linalool, benzyl, phenylethyl), aldehyde ((E)-2-heptenal, nonanal, 5-methyl-2-phenyl-2-hexenal), ketone (3-Octen-2-one), terpene (junipene, citronellol, trans-Carveol) contents of tarhana samples can be increased by addition of the wheat germ. Practical applications: The wheat germ which exists as waste in nature and contains a high amount of essential amino acids, proteins, fatty acids, minerals, dietary fiber, vitamins, etc. Wheat germ can be added to cereal-based food formulation such as tarhana in order to supply to the trend toward natural and functional foods that do not include synthetic products. Tarhana (basically made from yogurt, wheat flour, herbs, tomato, pepper, onion, etc.) which is a traditional fermented dry Turkish soup is rich in vitamins, minerals, and proteins. Wheat germ based-fermented products such as Tarhana may be considered promising new functional foods due to its probiotic effects in order to expand the market due to the increasing trend toward functional foods.
- MakaleYalnız künye2021The effects of noise levels on pain, anxiety, and sleep in patients
Aydın Sayılan, Aylin; Kulakaç, Nurşen; Sayılan, Samet
Background: Intensive care is a noisy environment for patients and one that affects pain, anxiety levels, and sleep quality. Aims and objectives: To determine the relationship between noise levels and pain, anxiety, and sleep levels in patients in intensive care units. Design: A descriptive and observational study design was used. Methods: This study was conducted between June and December 2018 in a public hospital and included 111 patients admitted to surgical critical care for at least 24 hours. Three Benetech Gm1351 manual sound level metres were used to measure noise. A Patient Information Form, a pain Visual Analog Scale (VAS), the Spielberger State-Trait Anxiety Inventory, and the Richards Campbell Sleep Questionnaire (RCSQ) were used for data collection. Results: The mean age of the patients was 57.29 years. The mean noise level detected in the intensive care unit was 66.52 dB (dB). Patients' mean pain VAS score was 3.79 ± 1.72, the mean State Anxiety Inventory score was 39.74 ± 2.98, and the mean total RCSQ score was 25.10 ± 13.17. Our findings show that patients in the intensive care unit are exposed to high noise levels and that, while this has no effect on pain, it significantly impacts anxiety and quality of sleep. Conclusions: Noise levels in intensive care units significantly exceed recommended thresholds, and this adversely affects patients' anxiety levels and sleep quality. It is important for suitably restful conditions to be provided for patients, to be aware of the potential for anxiety, and for these factors to be borne in mind when planning nursing interventions. Relevance to clinical practice: Further studies on the effects of noise levels on pain, anxiety, and sleep levels in patients admitted to intensive care units are needed.

Aydın Sayılan, Aylin; Demir Doğan, Melike
Introduction: Research has shown that social support has a significant impact on quality of life. The purpose of this cross-sectional study was to determine the relationship between perceived social support, perception of disease and quality of life, and the factors affecting these, in patients with cancer in Turkey. Methods: The study data were collected from two hospitals. Data were collected using the face-to-face interview method from patients diagnosed with cancer between March and August 2018. No sampling was performed, and the entire population was studied. Results: The mean age of the patients in the study was 61.37 ± 14.89 years. Married patients had better social support than single individuals (t = 2.129; p = 0.035). Significant negative correlation was found between the illness perception scale and total quality of life scale score (r = −0.163; p = 0.026), and physical well-being (r = −0.224; p = 0.002) and social well-being (r = −0.199; p = 0.006) subscales. Conclusion: Patients’ social support and quality of life were at moderate levels. Married participants had better social support than single participants, and operated participants had better social support than unoperated participants. As illness perception decreased, quality of life, physical well-being and social well-being increased.
- MakaleAçık Erişim2020An assessment of phenolic profiles, fatty acid compositions, and biological activities of two Helichrysum species: H. plicatum and H. chionophilum
Acet, Tuba; Ozcan, Kadriye; Zengin, Gokhan
In the present study, we aimed to search and compare the biological activities of the ethanol (EtOH), methanol (MeOH), and ethylacetate (EtOAc) solvent extracts of the flower, stem, and root parts of two Helichrysum plants (H. chionophilum (Hc) and H. plicatum subsp. plicatum (Hp)). The antioxidant properties were determined by using (2,2-diphenyl-1-picrylhydrazyl) (DPPH) and ABTS (2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) assays. The enzyme inhibitory effects of the extracts were investigated on butyrylcholinesterase (BChE), acetylcholinesterase (AChE), α-glucosidase, and α-amylase. Palmitic acid (C 16:0) was also determined as major fatty acids in the tested oils (31.21%–67.68%). In both plants, it was found that the EtOAc extracts of the flowers had a strong antioxidant and enzyme inhibitory effect. In conclusion, the results obtained in the present study showed that H. chionophilum and H. plicatum can be seen as a promising source for the natural bioactive compounds that can be used in therapeutic applications. Practical applications: The members of the genus Helichrysum have been widely taken for therapeutic purposes in traditional medicine as well as food. In this context, we investigated the chemical characterization and biological activities of two Helichrysum species extracts (H. chionophilum and H. plicatum subsp. plicatum). Antioxidant capacity, enzyme inhibition and anti-microbial effects were tested for biological activities. Chemical characterization was identified by high performance liquid chromatography (HPLC) (for phenolic) and gas chromatography-flame ioanization detector (GC-FID) (for fatty acids). Based on our findings, the species may be valuable for designing novel food products.
- MakaleYalnız künye2020Disaster Risk Perception of University Students
Mızrak, Sefa; Aslan, Ramazan
Stakeholders responsible for disaster management need to understand students' disaster risk perception in order to increase community resilience. The aim of this study was to develop a scale to determine disaster risk perception of university students on campus and to investigate the disaster risk perception of the students of Gümüşhane University in Turkey. The data of the study were collected from 617 students and analyzed by means of SPSS and AMOS programs. Descriptive statistics, factor analysis, Mann–Whitney U test, Kruskal–Wallis H test, and structural equation model were applied. Consequently, a valid and reliable scale consisting of four factors (exposure, anxiety, effect, and uncontrollable) was obtained. According to the students, rockfall was most likely to occur on campus. Gender and type of school had a significant effect on disaster risk perception, while disaster experience, disaster education, disaster volunteer, and class level did not have a significant effect on disaster risk perception. Students with chronic illness had significantly higher perceptions of the uncontrollable. The structural equation model showed that exposure, effect, and uncontrollable were significant and positive predictors of anxiety.
- MakaleYalnız künye2020A simplified neutrosophic multiplicative set-based TODIM using water-filling algorithm for the determination of weights
Köseoğlu, Ali; Şahin, Rıdvan; Merdan, Mehmet
Due to the technological developments around the world, the amount of information that researchers work on increases continuously. This information density contains incomplete and uncertain data that cannot be fully expressed with crisp numbers. Fuzzy sets, intuitionistic fuzzy sets, and neutrosophic sets are useful tools to manage such information, but these concepts use a symmetrical and uniform scale to express data, whereas real-life problems contain nonsymmetrical and non-uniform information. Intuitionistic multiplicative sets (IMSs) are effective tools for dealing with these real-life problems. However, IMSs cannot handle real-life problems completely because indeterminate information depends on membership and non-membership information of IMSs, which is a restriction for decision makers and also for decision problems. To overcome this limitation, this paper generalizes the IMSs by using simplified neutrosophic set and introduces a novel approach that is called simplified neutrosophic multiplicative sets (SNMSs). Firstly, we define SNMS, show their set-based operations, and then give a description of simplified neutrosophic multiplicative numbers (SNMNs). Based on SNMNs, we develop two simplified neutrosophic multiplicative aggregation operators on SNMNs that are called simplified neutrosophic multiplicative weighted arithmetic average operator and simplified neutrosophic multiplicative weighted geometric average operator. Furthermore, we define some simplified neutrosophic multiplicative distance measures. Finally, using a model based on water-filling algorithm for determining criteria weights, we give a numerical example to demonstrate the effectiveness of the introduced concept with the proposed simplified neutrosophic multiplicative simplified neutrosophic multiplicative-TODIM method.
- MakaleYalnız künye2019Characterisation of yoghurt enriched with polyunsaturated fatty acids by using walnut slurry
İlyasoğlu, Huri; Yilmaz, Fırat
This study aimed to evaluate the physicochemical, chemical, rheological, sensorial and microbiological properties of yoghurt enriched with polyunsaturated fatty acids (PUFAs). The PUFA-enriched yoghurt was prepared with walnut slurry (10%−50%) and skimmed milk (50%−90%). Compared with the control yoghurt, it contained a lower content of protein, potassium, sodium and phosphorus, and a higher content of fat, iron, magnesium and zinc. Moreover, it exhibited a lower syneresis value and a higher water-holding capacity value. Its fat was rich in omega fatty acids, mainly linoleic and linolenic acids. These research findings revealed that walnut slurry could be used in yoghurt manufacture to develop fermented milk products as functional foods, especially when enriched with omega fatty acids.

- MakaleAçık Erişim2016Effect of piracetam and nimodipine on full-thickness skin burns in rabbits
Sari, Elif; Dincel, Gungor C.
The potential of several drugs for full-thickness skin burns has been investigated, but the treatment of such burns remains a challenge in plastic surgery. The present study was designed to determine the effect of systemic and topical administration of piracetam and nimodipine on full-thickness skin burn wound healing. A total of 36 New Zealand male rabbits were divided into six groups. Full-thickness skin burns were produced in all the groups, except the control group. Piracetam was administered systemically (piracetam-IV) and topically (piracetam-C) for 14 days, and nimodipine was administered systemically (nimodipine-IV) and topically (nimodipine-C) over the burn wounds for 14 days. The sham group underwent burn injury but was not administered any drug. After 21 days, gross examination and histopathological analysis were performed and the results were compared statistically. Nimodipine-C and nimodipine-IV had no effect on burn wound healing. However, both piracetam-IV and piracetam-C significantly enhanced the healing of the full-thickness skin burn wounds, although the latter was more effective, useful and practical in burn wound healing. The histopathological features of the wounds in the piracetam-C group were closer to those of the control group than those of the other groups. Piracetam-C rather than piracetam-IV may promote full-thickness burn wound healing in rabbits.
- MakaleYalnız künye2014Simultaneous separation and preconcentration of Ni(II) and Cu(II) ions by coprecipitation without any carrier element in some food and water samples
Duran, Celal; Tumay, Sureyya O.; Ozdes, Duygu; Serencam, Huseyin; Bektas, Hakan
A simple and highly sensitive separation and preconcentration procedure, which has minimal impact on the environment, has been developed. The procedure is based on the carrier element-free coprecipitation of Ni(II) and Cu(II) ions by using 2-{4-[2-(1H-Indol-3-yl)ethyl]-3-(4-chlorobenzyl)-5-oxo-4,5-dihydro-1H-1,2,4-triazol-1-yl}-N′-(pyrrol-2-ylmethyliden)acetohydrazide (ICOTPA), as an organic coprecipitant. The levels of analyte ions were determined by flame atomic absorption spectrometry. The detection limits for Ni(II) and Cu(II) ions were found to be 0.27 and 0.58 μg L-1, respectively, and the relative standard deviations for the analyte ions were lower than 4.0%. Spike tests and certified reference material analyses were performed to validate the method. The method was successfully applied for the determination of Ni(II) and Cu(II) ions levels in sea and stream water as liquid samples and red lentil and rice as solid samples.
