Determınatıon of Physıcal and Chemıcal Propertıes of Marmelats Produced From Hunnap (Zizyphus Jujuba Mill.) Fruıt

    Kaplan, Benay; Okcu, Zühal

In this study, the changes in the physical and chemical properties of jujube (Zizyphus jujuba Mill.) Fruit and marmalade produced from this fruit at different temperatures (+4 C and +20 C) during storage for 3 months were determined. Water soluble dry matter, titratable acidity, pH, dry matter, ash, ascorbic acid (vitamin C), sucrose, invert sugar, total sugar, color in the 0, 1, 2 and 3 months of three months storage, Total phenolic substance, antioxidant capacity (ABTS and DPPH), yeast and mold analyzes were performed. During the storage period, in marmalade samples produced from jujube fruit, a decrease was observed in the amount of water soluble dry matter, invert sugar, total sugar, ash, dry matter, ascorbic acid (vitamin C), L, a, b values, phenolic substance and antioxidant activity amounts. In terms of temperature, high values are found in water soluble dry matter, pH, total sugar, invert sugar, ABTS and DPPH among the parameters examined from storage at + 20ºC, while in storage at + 4ºC; The highest values were obtained in terms of total dry matter, ascorbic acid, sucrose, L, a and total phenolic substance.

Using of Weeds as Food in Eastern Anatolia Region

    Kaplan, Benay; Okcu, Zühal

Several herb can grow naturally thanks to climate and geographical features of Turkey. Although there are approximately one million weed in the world, there are still many unidentified weeds. While more than ten thousand weeds are used as a food, only 3000 weeds species are cultivated in Turkey. Eastern Anatolia region is one of the most important regions of Turkey in terms of consuming weeds. The rate of endemic plants is higher in this region, most of them are important economically, because they can be used as a medicinal plants, spices, ornaments, dyes or food. Not only these are utilized as raw or cooked food but also flavorant.

Determination of Genetic Diversity Among Wild Grown Apples From Eastern Black Sea Region in Turkey Using ISSR and RAPDs Markers; [Ermittlung der genetischen Vielfalt bei wildwachsenden Apfelsorten mittels ISSR- und RAPD-Markern in der östlichen Schwarzmeerregion der Türkei]

In this study, we investigated interspecific variations of apple genotypes using ISSR (Inter-Simple Sequence Repeats) and RAPD (Randomly amplified Polymorphic DNA) technique. Total 19 genotypes of wild grown local varieties were collected from Eastern Black Sea region of Turkey and have been studied for the analysis of ISSR and RAPD profile to examine their relationship. From total 53 RAPD and ISSR primer investigated, 28 could amplify clearly and consistently. All bands obtained from ISSR and RAPDs primer were polymorphic. The dendrogram realized from the RAPD and ISSR markers grouped the 19 genotypes into two major clusters. Cluster I comprised ‘Bey Apple’, ‘Fatty Apple’, ‘Golden Delicious’, ‘Yellow Belly Apple’, ‘Bride Apple’, ‘Green Belly Apple’, ‘Summer Apple’, ‘Yomra Apple’, ‘Tavşanbaşı’, ‘Black Belly Apple’, ‘Chest Apple’, ‘Local Marble’, ‘English Apple’, ‘Willow Apple’, ‘Arabian Girl’, ‘Yellow Hıdır’ and cluster II contained ‘Starking Delicious’, ‘Mahsusa’, ‘Amasya Marble’. Genetic diversity data from this study will be helpful in using and exploiting the wild genetic material for breeding purposes as well as for further research.

Changes in chemical composition and peroxidase activity of turnip (Brassica rapa) during processing and frozen storage

Okcu, Zühal; Keleş, Fevzi; Şat, Ihsan Güngör

Chemical composition content and peroxidase enzyme activity of raw, canned and frozen turnip roots were determined. The peroxidase activity determined in the roots of raw turnip was 134x105 EU/100 g fresh weight and 170x105 EU/g protein. There were significant changes in the activities of peroxidase of canned and frozen turnip roots, as well as in the contents of protein. The peroxidase activity of canned turnip roots was practically undetectable while there was residual activity after blanching and freezing. Peroxidase is one of the most heat-stable enzymes in plants. This study shows that heat treatment of 3 min at 95°C is preferred for POD activity inactivating compared with other heat treatment. In addition, conserving process inactivated of POD activity, too.
