- MakaleYayıncıda açık erişim2014Characterization of rosehip (Rosa canina L.) seed and seed oil
Ilyasoǧlu, Huri
In this study, the nutritional composition and phytochemical composition of the rosehip seed, and the fatty acid and sterol compositions of the seed oil were investigated. The rosehip seed contained valuable phytochemicals such as phenolic compounds (2554 μg/g), carotenoids (2.92 μg/g), and ascorbic acid (1798 μg/g). Furthermore, the rosehip-seed oil was rich in polyunsaturated fatty acids, linoleic acid (54.05%), linolenic acid (19.37%), and phytosterols, mainly β-sitosterol (82.1%). The rosehip seed and seed oil were found to have antioxidant activity measured by trolox equivalent antioxidant capacity assay. It can be concluded that the rosehip seed and seed oil may be utilized as a source of phytonutrients.
- MakaleAçık Erişim2013Antioxidant effect of rosehip seed powder in raw and cooked meatballs during refrigerated storage
Ilyasoǧlu, Huri
The aim of this study was to learn the usage ability of rosehip seed powder (RSP) as an antioxidant agent to prevent lipid oxidation in raw and cooked meatballs during refrigerated storage. For this purpose, 4 different formulations (without RSP and with 1%, 2%, and 4% RSP) were prepared. Thiobarbituric acid reactive substances (TBARS) values of the raw and cooked meatballs were determined at 0, 3, 6, 9, and 12 days of storage. Both the raw and the cooked meatballs containing 2% RSP had lower TBARS values at the end of storage compared to the control meatballs. Moreover, the difference in sensorial properties between the cooked control sample and cooked RSP-added test samples was not significant. These results indicated that RSP may be utilized as a natural antioxidant in cooked meatballs.
- MakaleYalnız künye2011A proficiency test scheme for the quality control of black tea and development of quality control material for internal quality control

A proficiency test (PT) was organized for quality control analysis of black tea. Test materials for the analyses of total content of powder tea, moisture, total ash, acid-insoluble ash, water-soluble ash, alkalinity of water-soluble ash, water extract, crude fiber and caffeine were sent to the participant laboratories (n:43) in 2009. The assigned value, standard deviation of the parameters and z-scores of the participant laboratories were calculated using the data reported by the participants. The percentage of the reported results for analytes was found to be ranged from 67.5 to 100%. Acceptable z-scores were achieved by 80.5-97.5% of the participant laboratories. More than 15% of unacceptable results were obtained for acid-insoluble ash and caffeine analyses. The quality control material for quality control analysis of black tea was developed from the remaining material.
- MakaleYalnız künye2010Consumer perceptions of organic foods in Turkey

This study presents the results of a survey regarding consumer perceptions of organic foods in Turkey. The survey was conducted to determine consumer attitudes towards organic foods and the reasons for consumption or non-consumption of organic foods. A total of 383 consumers from different occupational groups living in Istanbul participated in the research. The results of the survey revealed that more than half of the survey participants had knowledge about organic foods. The majority of the participants were positive towards organic foods and purchased them as well. The results of chi-square analysis showed that the consumption of organic foods varied with respect to gender, job and education. Women and more educated participants tend to buy organic foods more than other participants. In market, fruits and vegetables, cereals and legumes, dried fruits and dairy products were organic products recognized by consumers. The main organic products purchased by consumers were fruits and vegetables. The results of the survey also indicated that the participants confidence in organic foods was at moderate level. About 37% of the participants was found to rely on organic foods and about 49% of the participants were unsure about organic foods. Organic foods were purchased because they were perceived as healthy, environmentally friendly and more nutritious than conventional foods. However, the consumption of organic foods was found to be lower. The majority of the participants stated that they consumed organic foods rarely or sometimes. Price and lack of availability of organic foods were barriers to increase the consumption of organic foods.
