Sökmen, Alev; Kenek, Gökhan; Karamustafa, Ahmet Tuğrul
Each local cuisine differs from past to present according to the topographic structure of the region, its unique ingredients, cooking methods and even the accompaniments consumed together, creating the originality of that cuisine. With these differences, destinations attract the attention of tourists who travel with the motivation to experience local food, and for this reason, the number of gastronomic trips organized by agencies or individually planned is gradually increasing. These trips mean new and exciting experiences for tourists, often at local restaurants serving natural, authentic food and drinks. Experience is a concept that businesses pay particular attention to in order to ensure product attractiveness, and which has been discussed within the scope of marketing activities under the name of experience economy for a while. Based on this information, the aim of the study is to examine the relationships between gastronomic experience, perceived authenticity and local food consumption intention in a sample of domestic tourists visiting the Cappadocia region. Research data was obtained from 248 tourists who visited restaurants serving local food in the region in July-August 2023. In the study, firstly validity and reliability, then correlation and regression analyzes were performed, and finally, the bootstrap method was included in the regression analysis to measure the mediation effect. When the findings were evaluated in general, it was observed that there were significant relationships between gastronomic experience, perceived authenticity, and local food consumption intention, and it was concluded that perceived authenticity had a mediating effect on the effect of gastronomic experience on local food consumption intention.
- MakaleAçık Erişim2023The Mediating Role of Perceived Value in the Influence of Online Consumer Reviews on Destination Brand Loyalty
Ödemiş, Murat
Information technologies are rapidly showing their effect in the tourism industry as well as in every field. Online platforms have become a significant channel where consumers frequently share their consumption experiences and take them into account in their destination preferences. If managed effectively by destinations, it can become an effective tool in shaping consumer perception and brand loyalty. According to this, it is aimed to detect whether perceived value (PV) has a mediating role in the influence of online consumer reviews (OCRs) on destination brand loyalty (DBL) in the research. The sample of the research comprises of 315 attendants who visit Istanbul for touristic purposes. Research data were collected with the survey data gathering tool. After testing the data obtained from the attendants in terms of normality, reliability and construct validity, the relationships between the variables were investigated by correlation analysis. In the last stage, the hypotheses of the research were tested with simple linear regression and hierarchical regression analysis. Consequently, the basis hypothesis (H4) of the research, "the mediating role of PV in the influence of OCRs on DBL" were accepted with full mediation influence, and also accepted other hypotheses of research (H1, H2 and H3).

Şimşek Evren, Emine; Çakıcı, A. Celil
The aim of the study is to determine the moderator role of the commitment to the chef in\rthe relationship between the organizational commitment of the employees and their job\rperformance in institutionalized hotel kitchens. In this context, data were collected from\rthe kitchen staff of one of the national chain hotels in March-April 2019, using the survey\rtechnique (n=124). According to the findings, commitment to the supervisor and the\rorganization has significant positive effects on job performance. While the moderator role\rof income is significant in the relationship between organizational commitment and job\rperformance; it is not significant in the relationship between commitment to the supervisor\rand job performance. Employees with a high commitment to the chef show high\rperformance regardless of their income level. Organizational commitment, on the other\rhand, increases the job performance of the below-average income group, but does not create\ra significant increase in the above-average income group. Within the scope of\rorganizational commitment dimensions, the moderator role of income is significant in the\rrelationship between continuance commitment and job performance; while it is not\rsignificant in the relationship between normative-affective commitments and job\rperformance. As normative and affective commitments increase, job performance also\rincreases independently of income. On the other hand, as the continuance commitment\rincreases, the job performance of those with below-average income increases; job\rperformance of those with above-average income declines.
