This study explores, the impacts of incorporating of deep eutectic solvent (DES) as plasticizer on the characteristics of zein films. Investigation focused on examining the mechanical, thermal, surface, and microstructural properties of zein films that were plasticized using DES. The findings of the study revealed that by adding DES to zein films, there was an observed improvement in transparency. Additionally, it was observed that up to a 20% addition of DES led to a reduction in water vapor permeability (WVP). However, beyond this level, the WVP increased as the surface hydrophobicity decreased. The films that were plasticized with DES showed higher tensile and burst strength values than control. However, there was a decrease in the elongation at break and burst distance, except for the film containing 30% DES. The addition of DES as plasticizer resulted in smoother surface morphology compared to the control, and all films revealed homogeneous and non-porous surface and cross-section microstructure. The films plasticized with DES displayed three different thermal degradation temperatures resulting in higher thermal stability. The FT-IR spectrum of films showed similar backbone structure including Amide I, II and III bands. However, 5% DES plasticized film showed different secondary structural peaks of Amide I band due to lower α-helix and higher β-sheet and random coil content. The findings of this investigation indicate that the employment of DES as plasticizer in biodegradable polymer films can yield enhanced mechanical and barrier characteristics compared to conventional plasticizers, thus demonstrating its potential for effective use.

In this study, the effects of GSM 1800 band radiation on composition, structure and bioactivity of exopolysaccharides (EPSs) produced by Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus were determined. For this, GSM 1800 band radiation was applied to both cultures and characteristics of EPSs extracted from the control groups (K) and the radiation stressed groups (R) were determined. An alteration in the chemical composition of the EPSs was observed and EPS production levels and molecular weights of the EPSs increased following the GSM 1800 band radiation application. Alterations in the functional groups, thermal and morphological characteristics of EPSs following the GSM 1800 band radiation application were confirmed by FTIR, TGA and SEM analysis, respectively. Importantly no alterations in the antioxidant and antibacterial activity of the EPSs were observed following the radiation application. These results suggested the effects of the GSM radiation on final characteristics of EPSs from yogurt starter cultures.

The present study was aimed at investigating the effects of the dietary use of different doses of Moringa oleifera essential oil (MOEO) on performance parameters, internal organ weights and meat quality in Japanese quails (Coturnix coturnix japonica) exposed to Heat Stress (HS). For this purpose, 320 male day-old quail chicks were used. Seven days of preliminary (physical exercise) and a 35-day fattening period were applied. The animals were divided into 8 groups, each including 40 animals according to temparature (C: 25 °C and SC: 37 °C) and dietary doses (C, 200, 400 and 600). Each group was divided into 4 subgroups, each comprising 10 animals. The consequences of this study showed that, in the stress-free (HSF) groups, while all of the different doses of dietary MOEO positively affected growth performance, feed intake and feed efficiency, in the HS groups, similar positive effects were observed with the use of 200 ppm of dietary MOEO. While no effect was detected on internal organ weights on Days 21 and 42 in the HSF and HS groups, a dose-dependent increase was determined in the intestinal pH value on day 42 in the HS group (p <.05). Additionally, in the analysis of meat quality on the 21st and 42 days compared to the controls, no effect was observed on the meat colour parameters value and TBARS level in the HS and HSF groups. Based on the consequences of this study, it is considered that, MOEO could be used as an alternative product in poultry, at a dose of 200 ppm, to reduce the detrimental effects of HS.HIGHLIGHTS Temperature stress, performance parameters and serious problems in the health of poultry. Moringa olifera helps regulate performance parameters in poultry exposed to heat stress. Since the addition of Moringa oleifera to the diets does not affect the organ weight and meat quality in 21 and 42 days, it does not cause any negative effects for the consumer.
