Most plant parts are used in traditional food and medicine. Plants are significant resources of potential phytochemicals. This study investigated the properties of essential oil, antioxidant, and antimicrobial activities of the flowers and leaves of the Celtis planchoniana plant. Based on the GC/MS-FID analysis of essential oils extracted from the flowers and leaves of C. planchoniana, 101 and 91 compounds were identified from their structures, respectively. Chemical classes with the highest percentage of compounds found in essential oils of plants were oil acids, with 31.51% in flowers, and aldehydes, with 32.89% in leaves. Hexadecanoic acid (29.94%) and (E)-2-hexenal (16.11%) compounds were determined as the main components in the plant’s flowers and leaves. Among the flower and leaf samples, the highest antioxidant levels were 132.77-80.10 mg AA eq./100 mL in TAC, 17.63-118.23 mg AA eq./100 mL in ABTS, 71.41-85.15 mg GA eq./100 mL in TPC, and 15.08-15.71 mg AA eq./100 mL in DPPH capacity. According to the TFC, TPC, ABTS, DPPH, and FRAP tests conducted to determine the antioxidant properties of C. planchoniana, the essential oil obtained from its leaves demonstrated more significant antioxidant properties than the essential oil obtained from its flowers. According to the antimicrobial activity analysis, the leaf and flower essential oil samples exhibited no antimicrobial activity against the microorganisms tested.

Pekmez is a concentrated syrup-like food conventionally produced by vacuum evaporation process from sugar-rich fruits. In this study, the applicability of grape pekmez production by ohmic heating assisted vacuum evaporation (ΩVE) method was investigated. Conventional vacuum evaporation (CVE) and ΩVE methods were compared in terms of physicochemical properties, HMF (5-hydroxymethylfurfural) contents, rheological properties, and energy consumptions. ΩVE was run at four different voltage gradients (17.5, 20, 22.5, and 25 V/cm). Total process times for grape pekmez production were determined as 57, 28.5, 32, 39, and 50 minutes for CVE, ΩVE (25 V/cm), ΩVE (22.5 V/cm), ΩVE (20 V/cm) and ΩVE (17.5 V/cm), respectively. Energy consumption of CVE method was higher than ΩVE method for all voltage gradients. Energy efficiency increased as the voltage gradient increased. There was no significant difference between CVE and ΩVE methods for HMF contents. The results show that the ΩVE method could be an alternative to the CVE process for grape pekmez production.

Yuksel, Ferhat; Yavuz, Büşra; Baltacı, Cemalettin
In this study, a dried fruit roll up (pestil) was produced by using different concentrations of wheat, corn and potato flours. Simplex lattice mixture design technique was performed to determine the best flour mixture levels. The highest Hydroxymethylfurfural (HMF) was observed in the 13th sample with 6.60 mg/kg; and the lowest was in the 4th sample with 1.42 mg/kg. It was observed that the total phenolic content of the samples varied between 783.0 and 2154.8 mg GAE/kg and this variation was significant (p < 0.05). Significant increases in the antioxidant activities (total antioxidant and DPPH) of the samples were also determined in the pestil samples. Generally, sensory properties of the pestil samples significantly decreased by the increase of potato flour in the mixture and corn and wheat flours exhibited similar sensory properties. The optimum flour mixture was determined according to the sensory analyses, and it was determined that the best pestil formulation can be produced by incorporating 4.69 g wheat flour and 7.39 g corn flour per 100 g.

In the current study, the chemical constituents, antioxidant and antimicrobial activity of the volatile oil obtained from flowers and stems of C. speciosum growing in Türkiye were investigated. Both volatile oils were extracted through the hydrodistillation method in a Clevenger apparatus followed by the GC-MS analysis. The volatile oil yield attained from flowers and stems parts were determined as 0.62% and 0.65%, respectively. The most abundant compounds were determined in the flowers. Tricosane, octadecanal and hexadecanoic acid were identified to be the major components. Tricosane (38.28%) was defined to be the major component in flowers. 2-hydroxy benzaldehyde, tricosane and hexadecanoic acid were found to be the main compounds in the volatile oil of stems. 2-hydroxy benzaldehyde (46.49%) was found to be the main constituents in stems. According to the results antioxidant activity was attained as total antioxidant substance amount (86.77 mg AA/100 mL), total phenolic substance amount (65.64 mg GA/100 mL), total flavonoid substance amount (3.92 mg QE/100 mL), ferric (III) ion reducing antioxidant power capacity (6.88 mg FeSO4/100 mL) and free radical scavenging capacity (ABTS) (50.67 mg AA/100 mL) were obtained the highest antioxidant properties were obtained in flowers of C. speciosum. C. speciosum volatile oils had antimicrobial activity against Bacillus cereus in the flowers and had no activity against bacteria and yeast-mould in the stems.

This work reports the chemical composition, antimicrobial and antioxidant activities of essential oils from the aerial parts of Gentiana gelida BIEB. for the first time in literature. The oils from the aerial parts (flower, leaf and stem) were obtained by Clevenger-type apparatus and characterized by GC-FID and GC-MS. While tricosane (21.67%) was the main component of flower oil, hexadecanoic acid was the most abundant component of leaf and stem oils in ratios 26.46% and 31.89%, respectively. Additionally, all essential oils of G. gelida were investigated for their antimicrobial activity against eight Gram negative bacteria, four Gram positive bacteria and five fungi, using agar dilution method and antioxidant activities by using 2,2-diphenyl-1-picrylhydrazyl radical scavenging and Folin-Ciocalteu assays. The flower oil of G. gelida showed stronger antimicrobial and antioxidant activities than those of stem and leaf. The amount of total phenolic content and scavenging activity of the flower oil were found 525.35±8.24 mg GAE/L and 49.30±1.25%, respectively.

Mulberry pestil and köme are Turkish traditional foods made from herle. Browning leads to quality losses in the herle, and its products. In this study, the effect of thermal treatment on the hydroxymethylfurfural formation and color values in the herle was evaluated. The herle samples were kept at different temperatures (60–110°C) and times (2–6 h). The hydroxymethylfurfural formation was found to increase with increasing time and temperature. The legal limit for hydroxymethylfurfural in the pestil (50 mg/kg) was exceeded at temperatures above 90°C. The lightness (L* value) of the sample decreased with the thermal treatment, indicating browning.

This study presents a method validation procedure for the determination of aflatoxin B1, B2, G1, and G2 in hazelnut, hazelnut paste, walnut, peanut, pistachio, corn, and wheat. The method consisting of clean-up with immunoaffinity column, high performance liquid chromatography with postcolumn derivatization and fluorescence detection was validated in accordance with Commission Regulation 2004/882/EC. The selectivity, linearity, decision limit, detection capability, detection and quantification limits, precision, recovery, ruggedness, and measurement uncertainty of the method were determined. The limit of detection and limit of quantification values (μg/kg) were: aflatoxin B1, 0. 02, 0. 07; aflatoxin B2, 0. 01, 0. 02; aflatoxin G1, 0. 02, 0. 07; and aflatoxin G2, 0. 01, 0. 03. The relative standard deviation values for the repeatability and within-laboratory reproducibility were below 4 and 5 %, respectively. The recovery values of the spiked samples ranged from 80 to 105 %. These results complied with minimum performance criteria established by regulation 2006/401/EC. Therefore, the procedure can be implemented for the routine analysis of aflatoxins in the studied matrices.
