Ayna, Adnan; Mesci, Esra; Arserim-Uçar, Dılhun Keriman
Honey bee pollen (HBP) is a nutritionally rich natural product containing phenolics and antioxidants; however, its rigid outer wall limits the bioavailability of these bioactive compounds. Therefore advanced extraction and delivery systems are required to enhance stability and functional performance for food applications. This study aimed to encapsulate a supercritical fluid extract (SFE) of honey bee pollen within chitosan-stabilized Pickering emulsions in order to improve encapsulation efficiency and antioxidant activity. Honey bee pollen obtained from Bingöl, Türkiye, was extracted with supercritical CO₂. Pickering emulsions were prepared via ultrasound-assisted emulsification in the presence of chitosan as a stabilizer, with SFE-HBP at 5%, 10%, and 15% (w/v). The prepared emulsions were characterized for their microstructure, particle size, zeta potential, and encapsulation efficiency. Total phenolic content (TPC) and antioxidant activities were assessed using the Folin–Ciocalteu and CUPRAC assays, respectively. All formulations yielded stable, uniformly distributed Pickering emulsions with spherical droplets and no visible phase separation. Indeed, encapsulation efficiency increased with increasing SFE-HBP concentration, from 73.96% to 87.06%. The particle size ranges (7.22–12.44 µm) and zeta potential values (+21.73 to +28.24 mV) indicate good colloidal stability. For both TPC and CUPRAC antioxidant activities, a concentration-dependent increase was observed, with the highest values in the 15% SFE-HBP-containing emulsions. Collectively, these findings indicate that a chitosan-based Pickering emulsion is an effective delivery system for SFE-derived bioactive compounds from honey bee pollen. The method provides enhanced encapsulation efficiency, antioxidant capacity, and physicochemical stability, hence exhibiting great potential for functional food and nutraceutical applications.

This study aimed to investigate the antioxidant and enzyme inhibitory properties of Muscari armeniacum, a plant native to Türkiye, which is known for its bioactive compound content. Ethanol extracts of Muscari armeniacum were prepared and analyzed using a variety of bioanalytical methods to assess its potential health-promoting properties. The antioxidant capacity was evaluated through Fe³⁺-Fe²⁺ reduction capacity, CUPRAC, DPPH, and ABTS radical scavenging activities. Additionally, the total phenolic and flavonoid contents of the extracts were determined, as these compounds are critical indicators of antioxidant potential. The antioxidant activity of Muscari armeniacum was compared with five standard antioxidants commonly used for benchmarking: BHA, α-tocopherol, BHT, trolox, and ascorbic acid. The extract demonstrated a high flavonoid content (23.24 µg QE/mg extract) and a significant amount of phenolics (14.38 µg GAE/mg extract), with the flavonoid content being particularly noteworthy. In addition to its antioxidant properties, the enzymatic activity assays revealed that the extract significantly inhibited acetylcholinesterase (AChE) and butyrylcholinesterase (BChE) enzymes, which are associated with neurodegenerative diseases such as Alzheimer’s. The IC₅₀ values were determined to be 54.14 mg/mL (R² = 0.9695) for AChE and 58.73 mg/mL (R² = 0.9609) for BChE, indicating moderate enzyme inhibition. These results suggest that Muscari armeniacum could serve as a valuable source of bioactive compounds with significant antioxidant and enzyme inhibitory activities. Its potential applications in the treatment of oxidative stress-related diseases and neurodegenerative disorders make it a promising candidate for further pharmacological studies. This research underscores the importance of exploring native plants for their medicinal and therapeutic potential, contributing to the development of alternative treatments for challenging health conditions.

Yilmaz, Firat; Ordu, Gülsüm
The study examines the microbial and physicochemical properties of Hamsiköy rice pudding, comparing non-baked and baked samples. Microbiological analyses revealed notably higher counts of total aerobic mesophilic bacteria (TAMB), psychrophilic bacteria, and lactic acid bacteria (LAB) in non-baked samples, with TAMB and LAB reaching 5.69 log cfu/g and 6.06 log cfu/g, respectively. Conversely, the baking process led to a decline in microbial load, as evidenced by the lower counts observed in the baked samples. additionally, chemical analyses revealed that the baked samples exhibited higher dry matter, fat, and protein content compared to the non-baked samples. Additionally, the cooked rice pudding samples had lower L* values, indicating a* darker colour. Despite some variations, the chemical properties observed in this study are generally consistent with those reported in previous studies. The study concludes that the baking process enhances the microbiological and physicochemical quality of Hamsiköy rice pudding, thus making it a a product with enhanced safety and quality. Hydroxymethylfurfural (HMF), an indicator of heat treatment, was analyzed as well and was found to be higher in baked samples. Colour parameters (L*, a*, b*) revealed darker appearance in baked samples, aligning with consumer expectations for traditional Hamsiköy rice pudding.

This study aims to produce a low-calorie ice cream with a higher nutritional value using red beetroot (Beta vulgaris L.). Four kinds of ice cream containing 5%, 10 % and 15% sucrose and single red beetroot (RB) ratio 15% and control (15% sucrose+ RB free) encoded as RB5, RB10, RB15 and C were produced respectively. The addition of RB increased pH and decreased the acidity (LA) and dry matter contents compared to control. Ash content was decreased depending on the sucrose ratio. While the lowest overrun value was determined in the RB10 sample (23.08%), the highest was in sample C (39.18%). The increasing of sucrose ratio generally increased the first dropping time and decreased the total melting time. The addition of sucrose reduced the viscosity and the highest viscosity values were observed in the sample RB5. While the lowest total phenolic content (TPC) was observed in the control sample (329.69 GAE mg/kg), the highest TPC was found in the RB5 sample (558.55 GAE mg/kg). Also, the lowest DPPH value was determined in the control sample (13.66% inhibition), the highest DPPH value was determined in the RB10 sample (27.98% inhibition). While fructose and glucose values decreased, sucrose values increased in the ice cream samples depending on the increasing of sucrose ratio.

Erzincan Tulum Cheese (ETC) holds a significant place among the most popular cheeses in Türkiye. It has been awarded Protected Geographical Indication status, which restricts the allowable milk species, its production area, and specific sheep breed used in its production. Mineral content and antioxidant activity of ETC were aimed to be predicted using conventional FT-NIR and a portable FT-MIR spectrometer combined with partial least square regression (PLSR) and machine learning algorithms based on conditional entropy. Seventy ETC samples were analyzed for their mineral (Al, Ca, Cr, Cu, Fe, K, Mg, Mn, Na, and P) content using ICP-MS. The samples' antioxidant activity was measured using the DPPH•+ scavenging activity method. PLSR combined with FT-NIR spectral data correlated with antioxidant activity (r=0.89) and minerals (as low as r=0.83) except for Cr and Fe. FT-MIR data provided a good correlation for minerals (as low as r=0.82) except for Cr and Mn and a moderate correlation with antioxidant activity (r=0.64). Information theory was applied to select wavenumbers used in machine learning algorithms, and better results were obtained compared to PLSR. Overall, FT-NIR and FT-MIR spectroscopy provided rapid (~ 1 min), non-destructive, sensitive, and reliable output for mineral and antioxidant activity predictions in commercial cheese samples.
- MakaleAçık Erişim2021Effects of Cold and Hot Infusions on Antioxidant Activities of Rosehip Tea Bag
Akar, Zeynep; Orhan, Erza; Durmuş, Seçil
In this study, the antioxidant activity values of infusions at different temperatures of thecommercially sold rosehip tea bag. To determine the effect of different infusion temperatures onantioxidant activity, 7 different temperatures (0, 15, 30, 45, 60, 75, 90°C) also including coldinfusions temperatures were selected. Infusions of the rosehip tea bags were prepared with packageddrinking water for 5 minutes (recommended time in tea bag packaging) at these temperatures.Antioxidant activity values of the infused extracts were determined by antioxidant activitydetermination methods: TPC (Total Phenolic Compound), CUPRAC (Cu (II) Ion ReducingAntioxidant Capacity), FRAP (Iron (III) Ion Reducing Antioxidant Power) and ABTS•+(2.2-azinobis- (3-ethylbenzothiazoline-6-sulphonic acid)) radical scavenging assay. According to theresults obtained by the antioxidant determination methods, the highest and lowest activity valuesfor TPC, FRAP and ABTS were measured at 90°C and 0°C, respectively, and a positive correlationwas found between temperature and antioxidant activity values. Contrary to the activity valuesdetermined in these methods, in the CUPRAC method, the highest and the lowest activity value wasmeasured at 45°C and 90 °C, respectively. As determined in the CUPRAC method, infusions ofrosehip tea at low temperatures may provide an advantage in terms of the solubility of somephenolics that can be denatured at high temperatures. In addition, rosehip tea infusions at lowertemperatures will contribute to lower energy costs.
