Depolamanın 1., 7., 14. ve 21. günlerinde pH, asitlik, su tutma kapasitesi, karbondioksit miktarı, viskozite, toplam fenolik madde (TFM), antioksidan aktivite (DPPH serbest radikal giderme), laktobasil spp, laktokok spp., toplam aerobik mezofilik bakteri (TAMB) ve maya-küf sayıları açısından karşılaştırılmıştır. Çalışma sonucunda kereviz ilavesinin örneklerin pH değerleri üzerinde p&lt;0.05 düzeyinde önemli olduğu, su tutma kapasitesi, karbondioksit miktarı, viskozite, laktokok cinsi bakteri sayısı labtobasil cinsi bakteri sayısı, TFM miktarı, DPPH antioksidan özellikleri üzerinde p&lt;0.01 düzeyinde önemli olduğu görülmüştür. Kereviz içeren örneklerde asitlik daha yüksek bulunurken kereviz oranı önemli oranda etki etmemiştir. Kereviz ilavesi su tutma kapasitesi ve viskozite değerlerini düşürürken karbondioksit içeriklerini artırmıştır. Karbondioksit içeriği kereviz oranına bağlı olarak artış göstermiştir. Kereviz ilavesiyle TFM içeriği, DPPH serbest radikal süpürme aktivitesinde artışa neden olmuştur. Kereviz tozu ilave edilen örneklerde laktokok, laktobasil ve TAMB sayıları daha yüksek bulunurken, tüm örneklerde maya ve küf sayıları &lt;2 düzeyinde kalmıştır. Kereviz tozu ilavesi, kuru madde, protein, yağ ve kül değerlerini orana bağlı olarak artırmıştır.</dc:description><dc:description xml:lang="en">In this study kefir samples were produced by adding different amounts of celery powder (0%, 0.5%, 0.75% and 1%) and stored for 21 days. They were compared to pH, acidity, water holding capacity, carbondioxide amount, viscosity, total phenolic substance (TFM), antioxidant activity (DPPH free radical scavenging), Lactococcus spp. Lactobacilllus spp., TAMB and yeast-mould count on the on the 1st, 7th, 14.th and 21 days of storaga. The study results showed that the addition of celery was significant at p&lt;0.05 on the pH values of the samples, and it was significant at p&lt;0.01 on the water holding capacity, amount of carbondioxide amount, viscosity, count of lactococcus bacteria, count of labtobacillus bacteria, amount of TFM, and DPPH antioxidant properties. In samples containing celery, the celery ratio, which had higher acidity, did not have a significant effect. The addition of celery increased the carbondioxide content while improving the water storage capacity and viscosity properties. Carbon dioxide content increased depending on the properties of celery. The additional TFM content of celery caused an increase in DPPH and antioxidant active value. While lactococcus, lactibacillus and TAMB count were found at higher rates in samples to which celery powder was added, yeast and mold counts remained at &lt;2 in all samples. With the addition of celery powder, dry matter, protein, fat and ash values were increased depending on the ratios</dc:description><dc:publisher>Gümüşhane University</dc:publisher><dc:date>2023</dc:date><dc:type>Master Thesis</dc:type><dc:identifier>https://rdlopen.rawdatalibrary.net/r/gumushane/21418</dc:identifier><dc:language>tr</dc:language><dc:rights>info:eu-repo/semantics/openAccess</dc:rights><dc:type>info:eu-repo/semantics/masterThesis</dc:type><dc:identifier>https://gumushane-rdlopen.rawdatalibrary.net/tr/items/gumushane/21418</dc:identifier></oai_dc:dc></metadata></record></GetRecord></OAI-PMH>
